I am a chip-aholic. Corn, potato, cheesy, plain - I love them all! I would pass up dessert any day for a bag of sour cream and cheddar potato chips. So I was pretty nervous to try baked tortilla chips because I just knew they wouldn't live up to the real thing. I'll be honest, baked chips don't have that crispy fried texture but they are delicious! At the last party I served them at, I mixed them with store bought chips and most of the guests said they preferred the homemade ones!
Plus, you can make them any shape you want to fit any Pinterest inspired party theme.

Baked Tortilla Chips
Preheat oven to 350 degrees.
Brush both sides of your tortillas with oil. I find that it's easier to do this before you cut them but you can do it either before or after.
Cut your tortillas into sixths or use a cookie cutter to cut them into a shape you like. I used these star cookie cutters - using multiple sizes helps you get more out of each tortilla.
Spread them out evenly on a cookie sheet (I line mine with parchment paper for easier clean up but you don't have to.) Sprinkle evenly with salt and bake for 12-15 minutes until golden brown. If you are using multiple cookie sheets, rotate them about halfway through cooking.
