I think I saw my first avocado toast on a friend's Instagram a couple years ago and immediately thought, "Why didn't I think of that?" It's simple, fast, healthy and still has that special feeling that peanut butter on toast just can't give you no matter what kind of bread you use or how much you try and fancy it up.
I thought by now everyone has heard of avocado toast. It's definitely appearing on a regular basis on all the recipe sites I follow - but on a recent family vacation I was surprised to hear how many people were not familiar with it when it came up in conversation (because it does come up in conversation with me a lot!) Based on this, I felt it was my duty to get the word out -- avocado toast is something that should be on everyone's breakfast table. Did you know avocados are full of protein? And full of vitamins? Also, I found a trick to picking out the perfect avocado a couple years ago and the method has never failed me. You feel the avocado and make sure it's slightly tender to the touch (not rock hard, not squishy.) Then you remove the stem and look underneath - if it's light green with no brown spots, it will be a perfect avocado. If it's brown at ALL, move on.
Avocado toast is one of those things that you can personalize a thousand different ways. The base is two ingredients: avocado and....toast! But you could put any number of other things on top too -- fried egg, cherry tomatoes, lox, bacon, cheese, nuts, salsa...you can go simple or fancy. I'm a simple kind of gal and this is my favorite way to make it.

2 slices of bread - toasted. I love a chewy, whole wheat bread for this. Dave's Killer Bread is my favorite!
dried red pepper flakes
Cut your avocado in half and remove the seed.
Take a knife and while the avocado is still in the skin, run your knife through the avocado but don't cut through the skin, making thin slices. When the entire half of avocado is in thin slices inside the skin, take a spoon and run it under the avocado right along the skin. The avocado will come out in perfect slices. You can also just scoop out the avocado, mash it a bit and used mashed avocado - but the slices presentation is so much prettier!
Place the sliced avocado half onto the toast and squeeze some lemon juice over the top. Sprinkle with salt and red pepper flakes. Repeat with other half of avocado on 2nd piece of toast.
Again, you can personalize this to your liking. Bacon, egg, tomato, goat cheese, nuts, salsa, and lox are other ideas to top your toast!
